Vegetarian Peanut Butter Cookies - They THAW in your mouth!

These Banana Oatmeal Cookies are hands down the very best banana flavored cookie I've ever had. Not only are they really moist and simmer for times, but they are unmistakably banana-y.

Banana may be one of those flavors that can get lost once you inhale with this. It can be quite delicate taste. It always bums me out once that happens, cause I LOVE the taste of banana. And so does the hubs.

So when great flavored banana treats come along, we move a little crazy for them.

These cookies make the record of banana items to go crazy for. With no doubt.

And they are so moist, they nearly melt in your mouth. In addition, using both banana and oats inside them, they are basically healthy, right? And perfect for breakfast!

Making them is just as easy as eating them.

You've got the typical suspects -- butter, brown sugar, white sugar, an egg, vanilla and mashed bananas. You begin with mixing all those lovely ingredients together.

I must warn you. The smell of the mixture -- together with all the banana -- is equally intoxicating. The hubs was at the kitchen which makes the dough together with me (we left a bargain that included him baking with me) and we both had to work hard not to put our faces, or a straw, straight into it.

Then you add all the dry ingredients (which usually means you simply use one bowl -- yay!) And combine it all together!

To bake themspoon out about a tablespoon of bread and produce a thick disc, instead of a ball. They spread somewhat when baking, and therefore don't put them too close together. Bake them for about 10-12 minutes for a nice, moist cookiecutter. So yummy!

1 additional thing I love about this recipe is where it came out.

My grandmother (my father's mom) passed out in 2008. After I started baking a lot a couple of years ago, my uncle gave me cookbook he'd had and didn't use. I've had it on my list to make a number of her desserts ever since.

It was a custom for my grandma to make them each Christmas! She gave everyone a big tin of these, which was really an effort with 6 sons.

I now know exactly how much of an effort it had been! My goodness. She left them using a conventional gaufrette iron which goes over a open flame. My dad and I had them around the cooker. They cook very quickly and you have to be exact. Too little time and they sort of disintegrated to the iron. As long and they burnt to the iron and we had to scrub it out.

My father was pouring the batter and removing the cookies, I was working the iron, the hubs was timing things. It required many attempts to get it , but they had been so excellent! I've attempted to make them again on my own and it works. I would love to share the recipe, but the dang irons are so hard to find. And pricey. At some point, I would love to just earn a cookie cutter with the same gaufrette flavor.

For now though, I'm sharing these biscuits. I really don't believe I had them made thembut they're from her novel.

It is such an enjoyable recipe book to check through, also. There are many handwritten pages, clippings and newspaper recipes that were taped to the publication. I really like the way they used to compose recipes in the newspaper -- they had the person who filed it is title and adorable little stories. It is so enjoyable to read through them! What a different time in the world!

Anyways, I do not know where this recipe originated from. The paper appears like it had been on a flier from their square dance class or something (they have been big to square dance ). It is undoubtedly from West Virginia, in which they dwelt.

In any event, I am so glad to finally share a recipe out of her book with you! I made a few changes to make them thicker and more puffier and they are delicious. check There'll be more to come out of her recipe book, but for the time being like the banana.

Banana Oatmeal Cookies

Yield: 34-36 COOKIES



3/4 cup salted butter, softened (I use chalk Butter)

1 cup brown sugarpacked

1/2 cup sugar

1 egg

1 teaspoon vanilla extract

1 1/2 tsp cinnamon

1 teaspoon baking soda

1/4 teaspoon ground cloves

2 tsp cornstarch


1. Mix together butter, brown sugar, sugar, egg, vanilla extract and mashed bananas until well combined.

2. Add flour, cinnamon, baking soda, cloves and cornstarch and blend until blended.

3. Stir in oats.

4. Preheat oven to 350 degrees.

5. Flatten dough just a little bitinto thick disks. They'll disperse a bit when baked.
